This Indian spinach and cheese dish is such a wonderful weekend treat. It’s super easy to make and taste great too! The best I ever had, was in Port Blair on the Andaman islands in India. The restaurant was probably not the cleanest I ever been to but the food the chef dished out of that kitchen was amazing. We went back several times to sample this wonderful dish. Here is my version.

Serves 4.

1 large onion, cut in small pieces
2-3 garlic cloves, crushed
2-3 green chili peppers, thinly sliced
2 teaspoons grounded cumin
2 teaspoons grounded coriander
500 gr spinach, washed
3-4 tomatoes, roughly chopped
Sunflower oil
Salt and pepper

Panir cheese , cut in 1 cm cubes (from the organic or Asian supermarket or make your own, recipe is coming up!)
Boiled rice

Fry onion and garlic gently in the oil in a large, deep frying pan. After a couple of minutes add chili peppers and the spices and fry for another 4-5 minutes. Add spinach, little by little. It shrinks pretty quickly. When all spinach is ‘gone’ add the tomatoes. Let it all cook for a couple of minutes until the tomatoes are soft. Pour it all in a food processor (including the liquid). Blend it real well and bring back to the frying pan and keep warm. In another frying pan, add a bit of oil and gently fry the cheese until light brown on all sides. Add cheese to the spinach, heat it all up and season with salt and pepper. Serve with rice.

By the way, if you ever get a chance to travel to India I highly recommend to go through the effort and head out to the Andaman islands. Located between India and Thailand in the Bay of Bengal, it’s a bit of paradise on earth. Think turquoise water, pearly white beaches, palm trees, friendly locals, delicious food and very little tourists. Beach nr. 7 is so pretty it makes you want to cry. If you do go, the old man running the little shop closest to the beach serves the most wonderful, fresh, coconut cakes on earth. I might try to reproduce one of these days!
