Small trips can be just as exciting as big ones. And you don’t always have to go far for trying something new and tasty. A while ago when the weather was still a bit sunny and warm we went for a lovely countryside walk. We stopped for lunch in a village pub where they were serving these delicious, filling toasts for lunch. I am happy to share my version of it with you.

Serves 2

2 garlic cloves, peeled and thinly sliced
200 g spinach, washed and drained
2 eggs
40 g parmesan cheese, grated
4 slices of toast
1/2 tbsp olive oil
½ tbsp butter
Salt and pepper

On medium heat, fry the garlic slices in the olive oil 2-3 minutes. Add the spinach in batches. Keep doing this until all spinach is wilted. Stir well. Season with salt and pepper.
In another pan, fry the eggs in the butter. I prefer mine fried sunny-side up but obviously you can fry them as you like.
Divide the spinach over the toast. Top with the egg and sprinkle with the cheese. Season with salt and pepper.
