I thought I would treat you to this recipe of Huevos Rancheros, a fantastic Mexican breakfast dish. It is one of those meal you might be craving after a long night out with one or two glasses too many. So a perfect new year’s day type of meal! In Mexico it’s an everyday breakfast treat and as I spent 10 weeks there I did have quite a few. Some more simple with just salsa and egg and others a bit more lavish like my version.

Serves 4

Salsa:
1 tbsp olive oil
1 yellow onion, diced
1-2 fresh jalapenos or green chili peppers
1 can of tomatoes
1 tsp crushed red pepper
1 tsp chili powder
1 tsp cumin
salt and ground black pepper

Sauté the onion and the green peppers in the olive oil on medium heat for a few minutes. Add the rest of the ingredients. Give it a good stir. Bring to a boil, then reduce the heat and let simmer for 10-15 minutes. Season with salt and pepper.

1 tin refried beans
4 corn or flour tortillas
4 eggs
a handful grated cheese
1 tbsp fresh coriander, roughly chopped
salt and ground black pepper
1 large avocado, thinly sliced
1 tub of sour cream

Heat the refried beans in a small pot and on medium heat.
Heat the tortillas in a frying pan a couple of minutes on each side.
Meanwhile,in another frying pan, fry the eggs sunny-side up.
Divide the refried beans over the tortillas. Add spoonfuls of the warm salsa over the beans and spread evenly. Add the grated cheese and top with the egg.
Sprinkle with coriander and season with salt and pepper.

Serve with thin slices of avocado, extra coriander and a dollop of sour cream.
