A friend of mine who is brought up in Zimbabwe shared this delicious salad recipe with me. It’s something she use to eat while growing up. It can be served on it’s own or as a side dish to meat of fish. I think it is wonderful and just love the sweet and sour combination with a tad of spice from the cayenne pepper.
This dish brought me to an idea. I would love to receive more recipes to try out. It could be something from your home country, something from your new country (thinking of all the expats out there!) or just something that you are particular fond of. I am sure this will give lots of cooking pleasure!
500 g wheat (in Dutch it’s called tarly. If you can’t find wheat/tarly bulgur, couscous, quinoa or chickpeas works well too)
1 small onion
2 garlic cloves
a handful parsley
3 tbsp mango chutney
3 tbsp sunflower oil
1 tbsp vinegar
1 cm ginger, grated
1 tsp cayenne pepper
salt and pepper
150 g mixed dried fruit
150 g mixed (unsalted) nuts
Cook the wheat according to the instructions on the package. Let cool.
Chop the onion finely and mince the garlic. Chop the parsley.
Make a dressing from the chutney, oil, vinegar, cayenne pepper and ginger. Season with salt and pepper.
In a bowl, combine the wheat with the dressing and the onion, garlic and parsley. Just before serving, add the dried fruits and nuts.
